Shrimp in Lemon Sauce Recipe
Makes 8 servings
Ingredients
- 3 cloves of thinly sliced garlic
- 3 tablespoons olive oil
- 2 cups chopped fresh organic parsley
- 4 tablespoons of drained capers
- ¼ cup fresh lemon juice
- 2 tablespoons low fat margarine
- 2 pounds jumbo shrimp
- 1 teaspoon grated lemon zest
- Kosher salt and pepper to taste
Directions
First, in a large skillet mix together the margarine, olive oil, and garlic. Cook on medium for 4-5 minutes.
Second, mix the shrimp, lemon juice, lemon zest, and capers in the skillet with the sautéed mixture.
Finally, cook the dish on medium for 4 minutes flipping the shrimp at the 2 minute mark. Add the fresh organic parsley, kosher salt and pepper.
